Ingredients

  • Veg Roasted chicken – 500g
  • Onion -1
  • Red chilli – 1
  • Cinnamon quill – 1
  • Star anise – 1
  • Cloves – 3
  • Fennel seed – ½ table spoon
  • Crushed garlic/ginger – 1 table spoon
  • Curry powder – 4 table spoon
  • Chilli powder – 1 table spoon
  • Coconut milk – ¼ cup
  • Salt – To taste
  • Coriander – 2-3 stems

Preparation

  • Heat oil in a wok on medium heat.
  • Add cinnamon quill, star anise, cloves and fennel seed. Lightly toast.
  • Add onion and fry until golden.
  • Add crushed garlic/ginger and sauté until raw smell disappears.
  • Add chilli powder, curry powder and ½ cup water. Cook into a paste.
  • Add vegetarian roasted chicken, mix well
  • Add ¼ cup water and coconut milk. Reduce this until semi dry.
  • Add salt to taste.
  • Garnish with fresh coriander.
  • Enjoy
